Basically Harlem spots like Sylvia's, Amy Ruth's, Melba's and Red Rooster all have it on the bone but newer eateries like Harlem Public or The Grange serve everything up boneless which is also popular. We did a poll on our twitter account recently and it turns out that a two third majority like it the classic way, bones and all. So basically Central Harlem will be the spot for all the purist out there and those who want their fried chicken as an easy cutlet should drop by the restaurants in Hamilton Heights.
