Harlem Bespoke: We have been hearing about Shake Shack's chicken bites but only recently were able to try them out when the Harlem location opened up at 125th Street and Fifth Avenue. Most nugget out there are either processed paste construed into morsels or rather dry breast tender bits that tend to be bland once one passes through the crispy coating. Basically a lot of attention is typically saved for the breading or batter but the most important part is usually neglected.
Shake Shack uses a sous-vide method to keep the chicken breast chunks super moist and must have marinated white meat in the process since this is some of the most flavorful offerings out there in the fast food world. The breading is obviously also well seasoned but not in an overpowering way which is a nice balance when dipping everything with the BBQ sauce or hot mustard. There is a reason why Shake Shack has become an international phenomenon and this fantastic chicken bites are one of the great offerings that make the eatery worth visiting.
