BESPOKE DIARIES: ELEVATING HOME DELIVERY MEALS

Harlem Bespoke: The thing about fine dining takout these days is that homecooks can elevate the experience to restaurant level by quickly reheating and plating the delivered goods.  During self isolation over the holidays, a family member sent in a gift certificate for Maison Harlem at 127th and St. Nicholas Avenue but we decided to switch things up once the order arrived.  Fast food in disposable containers work in the casual sense but higher price points really deserve more attention in our opinion. 

A French bean cassoulet stew with duck confit and merguez sausage arrive in the usual plastic container but we quickly put everything in a metal paella pan and dabbed a little olive oil over the meats.  Within 10 minutes under the broiler,  a nice baked finish came together and everything was ready to eat.  We actually did not realize that a few large chunks of pork belly was part of the offering and would probably have seared those pieces also but all tasted amazing regardless of this little detail.  A small cast iron casserole dish or a nice porcelain one can also be used instead of the copper pan to get maximum effect.
